Stuffed Breast of Chicken “Florentine Style” with Champagne Sauce

For the Chicken:

6-7 oz boneless chicken breast
12 oz baby spinach
6 oz feta cheese
3 oz sun-dried tomatoes
1/2 oz thyme
1/2 oz basil
1/2 oz oregano
Method:

Mix together: feta cheese, sun-dried tomatoes cut into julienne strips, and half of the baby spinach. Add the herbs into the mixture and set aside. With a sharp boning knife or paring knife cut a pocket into the side of the chicken breast. Put the cheese mixture into a piping bag with a round #8 tip. Pipe the mixture into the pocket of the chicken breast. Refrigerate before cooking.

Preheat the oven to 350 degrees F. Pour a little olive oil on baking sheet, and place the stuffed chicken breast on it. Bake in the oven for 17 to 20 minutes.

Saute the rest of the spinach and divide evenly among the 6 portions.

Cut the cooked chicken breast on an angle and place it on the sauteed spinach. Pour the sauce on one half of the chicken.
